If you're familiar with chocolate no bake cookies & you like pumpkin then you'll like these,I'm not a pumpkin fan but the spices give these just enough sweetness to change my mind😄
NO BAKE PUMPKIN COOKIES
1/4 c. butter
1/2 c. sugar
2 tbsp.milk
1/4 c. pumpkin puree
1/4 tsp.cinnamon
1/4 tsp.pumpkin spice
1tsp.vanilla
2 c. quick oats
add butter,sugar & milk in boiler over med heat,stir till blended,add pumpkin & spices,bring to a boil stirring constantly for 2-3 minutes,remove from heat & add oats,drop by spoon fulls ,the amount you get will depend on how big or small you want them ,I used a teaspoon & got 15
don't let the soft consistency fool you,if you over cook them they will be dry when they set up ,they can be placed in the refrigerator to cook & set up quicker
sounds interesting...I'd need to google to see what goes into pumpkin spice - maybe cinnamon, nutmeg??
